Please can someone advise me on the more valuable fish available and their uses ie why they are valuable
Approximate AH values on your servers may also help to clarify relative values between the fish..........

Stonescale Eels, to make stonescale oil, used in many potions, quests, and crafts, sell for about 1g each. Not easy to catch though. Best spot I found at a lower level was in STV on Jaguero Isle...there's a small peninsula on the NW corner of the island where you can stand with relative safety and fish. Everywhere else on the island you run the risk of smackdown from gorillas and stealthed cats.
Greater Sagefish, when cooked (Sagefish Delight, Cooking 175) and stacked to 20 can sell for 2-3g per stack. Maybe more, maybe less. Useful for raids due to mana regen/tick... and many raiders are not interested in taking time to fish.
Oily Blackmouth and Firefin Snappers are somewhat valuable, though since the invent of the fish schools, they have become easier to get, and the markets flood, making the fish less valuable.
Seasonally (not now) the winter squid are supposedly a valuable commodity, due to their agility buff when cooked. During the summer months the squid are replaced by Summer Bass which provide a Spirit buff. Desirable, but not as much as the agility buff.
Other things fishing can be profitable for is the treasure you can fish up in t he floating wreckage...I've gotten greens, gems, bolts of cloth, etc from them.
When you get really good at fishing (300+) you can find elemental water pools in Azshara where Water Essences can be fished. Spawns locations are fixed, but spawn times seem to be random, and they are heavily farmed. The spawn points are all located on the islands in the bay of storms, where you must swim from point to point (time) and dodge the 53-55 elite giants.

Deviate Fish, caught at any oasis in the Barrens as well as within Wailing Caverns. Used to make Savory Deviate Delight as well as a reagent for the Elixir of Giant Strength (alchemy). SDD is a low-level but rare drop recipe that, when consumed, turns the player into a ninja or a pirate for an hour (dispelled upon death). It has few practical uses but sells at fairly high prices to higher level players due to the fun factor. It can be combined with Noggenfogger for very interesting stacked effects.
I still make a nice amount of $$ on my server selling Blackmouth Oil and Fire Oil. BM Oil seems to sell more reliably. You will do better selling the oil than the fish I would suspect. Both oils require alchemy to make.
Greater Sagefish can be caught from schools in the river near Grom Gol if I am not mistaken. Kind of a treacherous place to fish, however, until you are in your mid-30s minimum, due to crocs, ogres, etc.
Probably the safest place to fish for Stonescales on a PvE server is off the pier in Steamwheedle. Yes, Tanaris is a higher-level area, but if you can run through Shimmering Flats without getting killed (which is pretty likely if you keep running), you should be able to make it all the way to Steamwheedle as there is rarely anything nasty lurking too close to the road between the Tanaris border and the pier. Once you get to Steamwheedle, there is nothing there that will aggro on you. Get the flightpoint for Gadgetzan on the way by for much easier access the second time.
Either way has some risk, but I would feel a lot safer at level 25-30 trying to fish from the Steamwheedle pier than from an island in SV. The main drop from this pier is Spotted Yellowtail, which is good for levelling cooking from 226 up to 270 or so.

Correction, I think that should be Elixir of Giant Growth.
Also, re: Steamwheedle. You will need fishing of about 300 to fish there or you will catch little. So long as you have your fishing at 225 actual skill, buy a stack of +75 lures and you are good to go under level 35. You must be lvle 35 to level fishing up above 225 without lures.
Bring the lures with you. No one in Steamwheedle sells fishing supplies at all and I'm not sure anyone in Gadgetzan does either (3-5 minute run).

Suggest you to get a +20 fishing skill Fishing rod, and when your skill reach 300, you can get Golden pearl from fishing in Azshara, about 35G in my server
