i work on a mac, is it possible to download anything to change the characters' appearance? (like, their skins or body shapes). None of the official WoW changer-thingies work on macintosh.

"Official"? How is anything "official", when changing your model or skin is against Blizzard's Terms of Service?
Yes, it's against the rules.

hmmm, I thought they had programs like "skin-changer" and things like that. While they may exist, it's still against the rules to change the appearance of models in the game.

I wouldnt attempting modding any files, since they are cracking down on it and it is a long and difficult process trying to explain why your account was banned (to a rep).
Read this regarding changing your characters appearance (aka "skins"):
1. Blizzard has clearly stated that changing the ingame models (including character) is illegal.
2. Since Blizzard has stated that changing ingame models is a no-no, this site and others have removed said AddOns. Some may have fallen through the cracks, in that case see:
3. Blizzard disabled the ability to change ingame models as of patch 1.10
4. Attempting to change the ingames models by any means will be detected by Warden and your account may be flagged/suspended for hacks.
