I am a lvl 32 priest. I currently have enchanting and herbalism as my professions. As of right now I have about 5 gold to my name, which isnt that great, IMO. I understand that enchanting can be profitable at higher lvls (I have it at about 120 now), but I am wondering if I should pick up mining or skinning, specially since my spells are getting close to 1G a piece to purchase? I realize that it will be a while before either one (mining or skinning) will be high enough lvl to pay off....
Or, should I just suck it up and keep lvling enchanting? What would you do?

Its too late to drop it try selling enchants to lower levels looking to be twinks. Keep your main focus leveling it man being a preist you should have been an engineer. Try spending like an hour a week looking for herbs and sellnig them.

You realize that you can drop proffessions?
Drop it!
You'll never make any money if you're trying to level enchanting at the same time as leveling, I tried.
If you really want to be a big enchanter then take it up when you're 60 and have a ton of cash.

Yes I know you can drop professions but why level it so high if your just going to drop it? He already spent the money to level it he might as well spend some more. enchanting prices are rising you can get money off it if you know how, if you do drop it make potions and sell herbs that gets tons of money.

120 isn't hard to get back to when you hit 60 up to 75 can come from DEing stuff from easy dead mine runs.
The money he's spent getting there is nothing compared to what he'll need to spend to get to 300. Considering that he'll also need to pay for skills. Only when you get to some good stamina enchants can you really start making money from enchanting.

I picked up Enchanting at 60 myself. Much easier that. I had skin/LW before. And then i dropped skin because ppl bring me mats for enchanting and Leatherworking.
I think at such a low level, your not going to get cash, definately. But if you drop enchanting for another, itll take alot of time to level that skill. You dont have a mount and so farming a new skill up will take time. Instead, you can do instance runs and DE non wanted BoPs or greeded BoEs and level your skill with mats. Then when your done, sell the mats in the AH to 60s AH Leveling their enchanting and willing to pay alot of money.
Thats what i think.
Also btw whats your other proffesion?
EDIT: Oh nevermind i see its Herb. Yeah keep both. My 60 priest is rich just off those two. Really keeping them will be really beneficial and wont waste time. At 40 i bought my mount easy, i just farmed a bit and sold the herbs, and then i sold enchanting mats. At 60 i got my epic mount easy as well. At or nearing 60 the benefits from herb/enchant go up so much. And both are the proffesions you have to least go out of your way to level and profit from. I say keep both and run instaces instead of leveling up a new prof.

Also, keep in mind that the new limits on the level of item that you can DE based on your skill will make it more of a pain to level enchanting at 60.

I would never drop enchanting, I make so much money out of it.
I dropped tailoring, though, and before I did I never realised how much cash I was missing out on by actually turning my cloth into stuff! I make triple the amount just selling it!

I wouldnt drop enchanting either. It has now gotten a huge boost with the demise of level 5 "enchanters". DE ftw!

LOL... no kidding I'm glad I refused to dump all my extra dream and illusion dust on the market now. Prices just doubled on my server. Go me Go Me...

I think a lot of servers on the market were flooded with enchanting mats from level 5 de'rs. Or even hacked accounts that had been sharded which won't be as easy anymore.
All enchanting mats are up considerably post patch, and they are harder to find. One can make a decent amount of cash now by running lower level instances and de'ing the drops.
