My answer was somewhat sarcastic, based on the fact that this is an impossible question for me to answer. I don't know your background, I don't know your server, I don't know your goals, I don't know your guild, I don't know your function in the guild, I don't kno.... well, I could go on for quite a while.
This is like the "What race should I pick?" questions.
Talk to people on your server, your friends and your guild.

Hi I've just rolled a Warlock and am playing Human!!! TBH I'd go with tailoring - especially for the bags - and being a Warlock you will want the soul shard bags when you can get them later on - you will be able to make them for yourself. And I've typically gone with enchanting too - as most of the tailored stuff isn't very good and will not sell - but you can disenchant the greens to help your enchanting.
I'd go with your origional options. But if you didn't like it then feel free to change - anything will work - just choose stuff you like.

Well thats cool - Engineering gives you some pretty cool stuff. With engineering you can make mechanical squirrels which are always popular and fun items - and like you say, you've also got all the bombs and stuff. Another good thing about engineering is that it lets you make scopes for rifles that hunters might want to buy off you. And there are some very usefull trinkets that you can get - Minor Recombobulator comes to mind.
And then there is the pet bombling!!!!!!

Go Tailoring till you're 300, make a Robe of the Void, switch to Enchanting.
The other profession doesnt matter but that Robe is the best you will get for MONTHS and disenchanting things from lvl 50 on is almost a must.
