Ive had a few questions so far and this community has been great. I have been a long time rts play, recently moving to this and Wow...no pun intended.
Ive been a fan of mods /UIs in the past and was wondering if there are any must have mods.
Good place to look is the UI subforum....lots of info there.

You should definately get FuBar (or titan mod they do the same thing), it displays a load of useful info at the top or bottom of the screen.
Also if you plan on selling anything at the auction house get auctioneer (http://auctioneeraddon.com/) just download the beta version i've had it for months with no bugs.
I'll second the mentioned FuBar/Titan and Auctioneer.
There are a few map-pack type mods out there. I prefer MetaMap (especially with the newly added herb/mineral/treasure tracker), but there's also Cartographer and a few others. Atlas (along with Atlasloot and AtlasQuest) is fantastic for instance info.
I recently added Bongos, which breaks apart the default UI into parts you can move around or hide. There are a ton of these actionbar mods (Trinity and Bartender are two other popular ones) so find one you like. I prefer Bongos because it doesn't try to do too much stuff.
There are a handful of HUD mods that move your character info to an area surrounding your toon, rather than the upper left of the screen. Keeps all combat info right in the center of the screen. Though you may think that gets in your way, too. Up to you. MetaHUD, ArcHUD, IceHUD...a handful of others too.
If you really want to totally overhaul your UI, the Discord mods are the way to go. If you've seen screenshots with themed UIs (like starcraft ones), Discord is the way it was done. I'd advise you don't jump into that right away though.
Play with the default UI for a little, and see if there's anything you wish was different. Then go look and see if there's a mod to do it.

Alternative to Auctioneer is KC_Items which I use currently until a final version of Auctioneer is released (I found the Betas quite buggy, but that was expected).
....and then there is a sticky with UIs at the top. Good thing is you see if you want something to completely change your interface or just your castbars or your inventory management or if you want just mods that give you status infos.
There are some nice screenies and some ppl list their mods
For me the first step into a bigger world was first getting
-Titan/FuBar
A bit later I got
-MyInventory/Bagnon/Onebag/Baggins
And finally
Flexbar/Bongos/Trinity
With also the odd nice class mod to look at like
Necrosis/Arcanum
(The ones I listed are not running simultaneously, but rather do the same thing...whatever version you might prefer)
