my friend swears that his local chef's toy has the best knife sharpener ever... and i told him that i've never seen a knife sharpener who knows how to sharpen knife because every self-respecting chef/cook will sharpen their own knife... "professional" knife sharpeners just fool housewives by sharpening their henkles :p and he's like BS, how is that different from how u sharpened it, and i said, i'll send u pictures and show u the difference :p

so here it is. next time, before you accuse me of doing something dirty when i leave wow and say i need to sharpen my knife... TANITHA!! :D maybe i really am sharpening my knife :p

turning a carrot, turned too hard when i got distracted and turned the paring knife right into my thumb... yep that kindda week...

who loves mandolin?? i do i do! except those moments when i mandolin my nail off >.< i'm actually great with them now that i always stop and pull my finger away from knife when i'm just about to cut myself!! no blood here, but nails gone :p

last one, on my index finger... no idea how it happened... i haven't hurt myself in a long time, some minor cuts from oyster or _____, but not with a knife, then come this week! left and right i'm bleeding all over the place!!

i can use a hug <3

sure it does. it's kc's 24mm Masamoto Gyuto :) i wouldn't call it knife of destruction since... it's extremely sharp and hard, which makes it brittle and weak. it chips from cutting on bones... unless by eternal detruction, you meant how the knife is eternally chipping away and i spent all my time sharpening and fixing my knife :)

I bought a good knife a while ago.

Global is the brand name and thats all i know about it, I'm no chief but i know Made in Japan = Good so eh. I haven't cut myself with it but my girlfriend has :rolleyes:

globals are fine, iirc they do use the same VG10 steel my knife uses. but, you still have to sharpen it :) look at the edge on my knife, now, go put that same edge on yours :p

ps. i have issue against the look of global tho... and the way it feels when you hold it :p

Regarding the look, i can handle the look, it's not a wall ornament :wink: and the feel part... this is coming from a guy that does not like the MX1000 :tongue:

Naugh, given that I'm not a cook so i don't have any inside to the market there is one little tiny retail store that sells knives anywhere near me and it's the best thing they had there. Cost a bomb too (Roughly $100US).

With regards to sharpening, i would give it to my dad (an avid knife collector since before i was born)

Kcma, are you planning to someday become the lord of the kitchens? These were the most marvellous kitchen knives I had ever seen.

If Blizzard would implement these into World of Warcraft, I will have my rogue dual wield these knives.

hidden secrets of Japan. every serious chef/cook in Japan uses these. they're harder and sharper than any western knife ever made. if the crappiest of these hand forged knives are BMWs... the best of these are the 200k+ cars, and anything made outside of japan are 1975 Pintos :p

shrug, that sounds elitest i know but that's just the difference in quality :p

holy hell those knifes are sick...
do you know the costs of one of those?

(since an average samurai sword is around 25,000$ I guess a knife like that won't be much less xD)

the first 3 are anywhere from $150-300 (depends on size), the forth one is a pure blue steel (ao-ko) with mirror finish knife that's around $2k... the 4th one is a Shigefusa chef knife with Damascus pattern for around $450... and the last one is a layered steel Masamoto with similar Damascus pattern that runs for about $600...

i can't afford to spend more than $200-300 on a knife now. but i would eventually pick them up. as for the ao-ko steel knives with special handles and details... i'd love having them but i doubt i would ever actually put it to work :p

katana can be $$$$ because they're longer, you rarely see a quality piece of steel that size hanging around. i wouldnt want something that big and sharp hanging around the house tho... it's a complete deathtrap... it falls on you and cut your arm off... who needs that :p i cut myself frequently enough i'll stay away from a knife/sword that big :)

and for reference my knife is a VG10 steel (stainless) that cost me $150... relatively cheap... sorta...

Yeah I get the part that a katana is pricier because it's more steel, but still 2k for a knife is something I wouldn't spend on it... although I would like to buy a neat katana some day ^^

then again, you a 2k knife is just useless to you as a neat katana :p if you're gonna spend that money tho... i'd travel to japan and have the swordsmith/knifemaker make it. the money you would save will more than pay for the whole entire trip. take that ao-ko Masamoto for $2k for example, it would cost maybe $1,200 in Japan. that difference will pay for the flight.

I mean, i would not be using a katana to cook? But if i had the money, i would definitely buy one. Just one of those things i have wanted since a kid is a real katana.

If one's neighbors' bedtime activities are knockin' things off of one's wall, one shouldn't be dumb enough to put swords on the wall. Besides, all of the swords I've seen have some mechanism that will keep the blade within the sheath.

I'm not trying to knock the quality of Japanese steel/blades, but something that sharp, and therefore dangerous, will have peace ties, a latch and knob, or something else to keep such an accident from happening.

i say ewww to concrete walls :p i grew up with that stuff and it's not cool unless you live in a loft downtown overlooking the city... and it's overed with inches of organic materials :p but regardless, i wouldn't ever have a katana in my house just like i wouldn't have a gun in my house. i dont even have kids! and if i have to choose between being shot by a 9mm and a katana falling on me, shoot me please :p

i would show you guys more cuts tonight... i had to shuck a bunch of Hama Hama oysters... and those oysters are SHARP... they kicked my butt and make me bleed all over the place. i can't bandage them because i dont know where they are... they're tiny and invisble... but they bleed all over >.<

Oh, should i upload pictures of my hands after cleaning an old dirty oven without gloves. A showcasing of what caustic chemicals does to your skin?

It was kind of cool really... i was scrubbing with a green scourer, put in a bit of elbow grease and instead of the scourer moving, my hand did ripping off the skin off the tip of my fingers.:laugh:

Truly, those knives will do better in the hands of a master chef, and a master chef doesn't walk around with all these cuts. I think you should start with something less sharp and work your way from there.

that's where you're wrong :) our sous chef Yumin used to be a sushi chef from Japan and he has by far the best knifecut anywhere on the west coast of US. and he's missing about half an inch of each finger. when i started cutting myself last week he laughed and said, good, you're knife cuts are getting better! and really, if you're not cutting yourself on regular basis you're just not cutting fast enough *wink*

i'd show pics of my finger from sharpening knife too but i forgot to take those pictures. i was totally into it and didn't realize that i'm sharpening my finger on the stone too until i saw blood on my water stone :p

JS: there's a thing call... gloves :p use them lol

and dull knife just f up your food anyways, destroy protein and bruise vegetable until everything taste like olive garden (not that there's anything wrong with olive garden). at that point, might as well do what they do and cut open a big vacum pack and BAM, all the veggies are chopped :)
