Other then doing boring quest what would be the quickest way of leveling from 40 to 55?

If you're not willing to quest. Grinding. Or perhaps instances, but that requires other people.

I prefer lvling through instances. the xp isn't as good as quests, but I like playing as a group. I lvl'd from 58-62 in ramparts/blood furnace instances before I ever did my first quest.
grinding is fun if you can make a game out of it :)

The key to grinding is finding an area that you enjoy. Some critters can be killed more easily with your skill set, saving you from having to use lots of health or mana jugs. And if you can do it in conjunction with a profession, like killing skinnables to sell skins, then even better.
Personally, I prefer a combination of grinding and questing. Check out this thread http://forums.worldofwar.net/showthread.php?t=387540 for ideas on which areas may give you the most benefit right now.
since pre-40 priest just arent that great at grinding, i grind minimally and quest hard :p we'll see how it goes after 40.

...yeah, that link that piscene gave got some really good tips. but as anyone can say, getting up to 60 can be quite a drag, especially if you hate grinding (as i do). but if your character is one of those good for PvEs, you normally wont have any problems.

That depends on your definition of what constitutes a boring quest. Grinding in the Hinterlands and Stranglethorn Vale is a good option. Go to Tanaris and do the Gadgetzan quests where you can grind on mobs and also complete quests. Check over in Shimmering flats for grinding quests. Also check out Feralas. Make your way to Un'goro Crater when you hit 50.
