I'm confused about enchanting. Let me give you a scenario of how I think it works and you can correct me.
I have twilight armor of the owl with +11 intellect and +11 spirit. I want those plusses on a robe I'm wearing now. Would I need enchanter for this and if so, how do I go about explaining to him/her what it is I want to do.

With the exception of socketeable items - you can have only one modification on an item. Thus you could ask an Enchanter to give you +Intellect OR +Spirit to your robe, but won't be able to get both. If, for example, you already had an Armour Kit applied to that robe (To give you for example +32 armour on it) that would be replaced by the Enchant.
So yes, you would need an enchanter to help you out. Simply ask them if they can do a +Intellect or +Spirit enchant to the chest. (Or other pieces) If you have the materials already that is always a bonus and most enchanters would be willing to do that for a tip. (And if skilling up possibly even no tip)

The closest you could get to that kind of enchant would be a +stats enchant, which would add +x amount to each stat. Nothing would be at +11, though, but I believe I have +4 ones for chest and bracers at the moment.
But yes, as Tanitha says, you can have only one enchant/modifier applied to each item (not counting socketing gems).
As to finding out what you can get, you can do a little research on the internet, and find out what enchants there are, or you can ask ingame, and someone will probably be able to give you an idea of what kind of enchants you can get, what materials you would need or the cost if the enchanter uses their own materials. Keep in mind the item you have, and how long you will keep it for. If you will be replacing it in a level or two, it's probably not worth the cost to enchant it. But if you just got a brand-spanking new blue item from a dungeon run, you'll probably have that for a lot longer, so could be a good investment to enchant. Again, a helpful enchanter could probably gauge your needs and the item you want enchanted.

You will get items that have "sockets" later on in the game. I'm not 100% sure where they drop - my gut feeling tells me Outland only, but I've not yet encountered one.
Sockets are coloured Red, Yellow and Blue. You can drop a gem (Either found, purchased or obtained from a Jewelcrafter) into a socket for additional bonusses on the item.
It's a bit like the old Diablo II concept of gems, as I understand it.

You can technically find socketed items in Azeroth, but only in the BC instances set there, like the Caverns of Time. I dont' believe there are any green socketed items, just blues and epics, either from drops in instances, world drops, or faction items you can buy.
I don't know if you can find cut gems that you can socket right away, at least I haven't seen any yet. There are vendors that sell basic gems for 2 gold each, but the best gems are made by Jewelcrafters, who take raw gems that you do find, and cut them into usable gems to socket your items. Most items have 3 sockets, though some have only 2, and often come with a 'Socket Bonus' if you fill all the sockets with gems.
It's a pretty neat idea, really, as it lets you get base items, and yet still customize them to your play style. For instance, I could get a robe with some basic +damage/heal on it, then socket in some nice +13 heal gems or something, so that I get a small boost to my +spell damage from the robe itself, and still have something that will decently replace some +heal gear.
They work a bit like enchants, and while a top-end gem won't be able to match a top-end enchant, you usually have three slots to fill. You can also replace old gems with newer gems, though this will destroy the old gem, much like a new enchant will remove an old one. But on the plus side, you can further go and enchant your item, for yet another bonus!
I know wowwiki has a great write up on all the gems available, so you could stroll on over there to see all the nice goodies. :grin:
Though this brings a question to mind, and I'm wondering if there are any weapons that have sockets in them, or is only armour pieces?

step one:
post a bunch of stuff on AH that you've Disenchanted from stuff you've bought previously.

log on in the morning after a few hours of sleep, and log in to check the mailbox, takes about 1 min.

Get a portal or a summons to shattarah and make it your home avoid the zepplin and you can train up without having to do the uldaman dance.

Enchanting:
Adds ONE additional bonus and/or effect on an item. Re-enchanting an item only overwrites the previous one. You can't take off an enchant or move it onto a different piece of equipment.
Example: You have a robe of whatever with +11 intellect and +15 spirit. You want more mana so you let an enchanter enchant it with +100 mana.
Example: The +11 intellect and +15 spirit are the stats that come with the item and cannot be changed. The +100 mana is the enchant.
Any piece of gear can be enchanted, but every enchant has a specific equipment part on which it works.
Example:
"Enchant Major Mana - Chest" is a different enchantment from "Enchant Major Mana - Bracers" (I don't know if the bracers variant exists though). This means that if there is no "Enchant Major Mana - Boots" you cannot get +100 mana on your boots.
To be able to enchant the enchanter needs materials like dust, essences and shards. He can make these by disenchanting gear of quality Uncommon (green) or higher (up to Epic gear). This destroys the gear and creates ransom amounts of the dust/essences/shards. Epic gear will obviously result in more expensive materials.
You need a certain level of enchanting to be able to disenchant higher level items. This was done so that Level 5 characters couldn't acquire and disenchant high level items whithout having to level.
What kcma demonstrated is that you can buy cheap gear from the Auction House (AH), disenchant it and resell the materials at the AH for profit since the results of disenchanting are not influenced by how much you payed for it.

Socketing/Gems:
L60+ gear starts to have Sockets. Sockets can be filled with a gem. Each gem has a little bonus (like +8 stamina) and acts as some sort of mini-enchant. A gem can (also lika an enchant) not be removed, but it can be overwritten (or "replaced"). Gems are made by jewelcrafters who use their skill "Prospecting" to sift through ore (like Copper Ore). This can result in an uncut gem that can then be made into an actual gem usable in a socket. Gems also drop off mobs.
Sockets have a color (red, yellow or blue). You CAN put a red gem into a yellow socket, but if you follow the colors you can get a little extra bonus (described on the item's tooltip). Some sockets only accept one type of special gems (called meta gems/sockets). Some gems match the color of two sockets colors (like... putting an orange gem into either a red OR a yellow socket still counts towards the socket bonus).
Hope this explains stuff better than all the half-informing posts throughout this thread :smile:.
