what class each race can be? I noticed being a night elf hunter questing in mainly human areas that It's hard to get hunter gear in human areas. The last bow I got from a quest was in wetlands. I have seen loads of armour and weapons that are for the classes that humans can be.

Pretty much yes. Although at that level, you can get away with Rogue gear as a hunter.
