What exactly do the weapons masters do? Whenever I talk to the one in ThunderBluff and click train, nothing appears in either available or unavailable.
Am I too low a level (17)?

It depends on your class more than your level, also different weaponmasters teaches different weapons so you might have to travel to Ogrimmar or Undercity to learn something you don't already know.
If you got unavailable showing your level wont matter at all.

I'm a Tauren Shaman. Any idea what weapons I can learn and from where?

Well.. all I know of Shamans is what I've learned off my lvl 17 draenei.. and it pretty much sums up to that someone should be able to teach you daggers, and that 2-handed weapons as well as Dual Wield will be available through talents.
And where? Either join a raid to Stormwind and hope that the weaponmaster is somehow bugged, or wait for a hordie to respond. My visits to your cities have been rather rushed.

I have no intention of raiding anything any time soon. I have enough trouble trying to keep myself alive and other smaller party members alive, in a group of 2-3!

Stoneskin Totem and put 3 ranks of heals on each their keybinding. At your level, rank 2 will be a lifesaver if you haven't got that extra half second, and the healed/mana ratio is almost the same.
Oh btw, you can learn Daggers in both Ogrimmar and Undercity.
Also, the guy in Ogrimmar should be able to teach you Axes and Fist Weapons.
Well, at least that's what I've been able to find.. suppose I'd better move my own Shaman past IF now..

weapon masters are to train you to make weapons when you have a blacksmith smith skill of 200 and over lvl 40

I'll try that when I get home. I need to get used to using more than 1 hotbar thing. I have my professions and a couple of other abilities on a second one, but thats as far as I've got so far.
I'll probably be heading to Ogrimmar in the next few days anyway, so will take a look.

Also I thought it was lvl 35, but I might be mistaken.
I need to get used to using more than 1 hotbar thing. I have my professions and a couple of other abilities on a second one, but thats as far as I've got so far.
Go to Interface Options => Advanced Options and enable one of the side or bottom actionbars (at the top of the screen), there's lots of addons out there allowing you to manipulate your actionbars far more than that, but you'll probably want to stick with the standard UI while learning the game.

Given I've had the game for a week, I will definitely wait before trying too many addons. Only ones I'm likely to get at the moment, are Auctioneer and anything to give me co-ordinates (I may get lost, less often then!)
I'll take a look at the advanced options later and see if those make things any simpler.

As a side note, you can ask a Weapons Master what the other Weapons Masters of your Faction teach. So once you know what weapon(s) you want to know, you can make a trip to the particular city, ask a guard where the Weapons Master is, and go train.
And no, you cannot raid an enemy faction city and talk to their Weapons Master.

Hanashi <Weapon Master>
Level 50 Humanoid
Found in Zones:
City of Orgrimmar
Notes: Hanashi trains Bows, One and Two-Handed Axes, Staves, and Thrown weapons. Each skill costs 10 silver.
Sayoc <Weapon Master>
Level 50 (Elite) Humanoid
Found in Zones:
City of Orgrimmar
Notes: Sayoc trains Bows, Daggers, Fist Weapons, One and Two-Handed Axes, and Thrown weapons. Each skill costs 10 silver.
Ansekhwa <Weapon Master>
Level 50 (Elite) Humanoid
Found in Zones:
Thunder Bluff
Notes: He trains in Guns, Staves, one- and two-handed maces.
Archibald <Weapon Master>
Level 47 to 50 (Elite) Humanoid
Found in Zones:
The Undercity
Notes: Trains crossbows, daggers, 1h sword, 2h sword, and polearms.
Oh and I almost forget, iirc it only shows you weapons which you can learn as class X. So as a Shaman, you wouldn't be told anything about the crossbows, 2h swords, polearms etc.

Thanks for all the help. I will make it to Orgrimmar at some point hopefully so I can use some of the other weapons available.
Also changed one of the UI options as suggested and its already made a huge difference.
