I somehow doubt you can get tier 2 and not know what blue and white gear are. But anyways, the higher the tier, the better the gear, even though I have heard that 'lock tier 4 is better than 5.
Color order from worst item to best.
Vendor Trash-Gray
Common-White
Uncommon-Green
Superior-Blue
Epic-Purple
Legendary-Orange
Artifact-Red

Did that help?
The Tiered items are drops from level 60 and 70 raid dungeons (with the exceptions of Tier 0 which drops from lvl 60 5-man instances, and Tier 0.5 which is gained through quests).
There's at least 1 set of armor for each class, in each Tier, although the classes that can choose what role they play (like druids, priests, warriors..) will get many different sets to choose between in some Tiers.
The colours of the text on the items refer to the Item Level (a value calculated from armor, DPS, various stats, gem sockets, Equip:'s, and Chance on Hit:'s) compared to it's Required Level (visible in the tooltip).
Well, in the case of crafting materials I suppose it depends on dropchance.
Apart from one or two items, gray stuff is best off sold to a vendor (if you pick up a lvl 18 shoulderpiece, even with it's name in gray, you're rich), White is mostly used by low-level characters or crafters, and from Green and up it starts being worth money.
For the official names of the colours, see Sylverin's post.. well, replace "Vendor Trash-Gray" with "Poor-Gray" and "Superior-Blue" with "Rare-Blue" and then see Sylverin's post for the official names. Superior only officially refer to T0/T½ sets.

Ok I am still not getting this tier stuff, I understand that it is dropped in raids.
So does this mean you can get 5 sets of items for a lvl 60-70 mage?
Tier 0, Tier 1/2 - Wtf are they? and why is it not Tier 1 but Tier 1/2?
Give me some examples maybe..
Thanks

Just some confusion.
There are 5 Tier sets. Tier 1, 2, 3, 4, 5
There are 3 Dungeon sets. Dungeon 1, 2, 3
Dungeon set 1 is often called Tier 0. This is because the first Dungeon set isn't a powerful as the Tier 1 set, so to put it at a lower level means putting it to 0. This set can be upgraded through a series of quests. This upgraded set is often called Tier 0.5 (or half, 1/2).
Dungeon 1 drops in the various level 60 5-person instances, mostly Scholomance and both sides of Stratholme, and UBRS (Upper Blackrock Spire, a 10-person instance). What drops where depends on the item.
I'm not sure about the Tier drops, as I haven't had a chance to go to the level 60 raid instances. Tier 3 I know came out with Naxxramus, but not sure where Tier 1 and 2 items lie in the scheme of things (I'm thinking Tier 1 was Molten Core, and Tier 2 Blackwing Lair, but could be offbase). Nor do I know about Dungeon 2.
Dungeon 3 is the first Outlands set to go for, and gears you up for the later 70 instances and raids, where you can start collecting Tier 4, which you will need for the very endgame raids for getting your Tier 5 outfit. I'm guessing some might call Dungeon 3 as Tier 3.5.
There's also sets meant more specifically for certain raid areas. I believe one is for Zul'Gurub, another for the AQ raids.
I'm not entirely sure where everything drops. One good ingame source I found that gives you details of all the sets is the Atlas mod (specifically a sub-addon called AtlasLoot). I'm sure there are others out there. There is a section for Collections, which lists all the various sets out there. You can even try on the sets in the dressing room.
There are also PvP sets for each class, Arena sets, high-end profession crafted sets, and a few class specific sets in the lower levels. (i.e. the Defias set for Rogues, gained in the Deadmines, the Scarlet set from Scarlet Monastary for Warriors.)
In any case, the advantage to all these sets is that besides each item being designed to match each other in look and style, they will give you extra bonuses with the more items of the set you wear. The items themselves are usually very good for your class, and gaining extra bonuses encourages you to attempt to collect the set to gain them. You will often see people say they have something like 6/8 Devout (which is the set name for the Dungeon 1 Priest outfit), for example, meaning that they have 6 of the 8 items in the set.
If you plan on going to Outlands and to level 70, you really shouldn't focus on trying to get anything below Dungeon 3/Tier 4 and 5. A lot of general Outlands gear is comparable or better than even Tier 3 items, and are much easier to obtain. Only the dedicated purist will try to collect the lower sets, but even then it would probably be very difficult to find 20 or 40 like-minded individuals, who would want to continually raid these lower instances over and over in an attempt to collect all the pieces.
I myself am collecting the Dungeon 1 set, just to have a taste of getting them, and to go on the quests to upgrade them (currently 5/8 of the Devout set! Yay, go me!). The Dungeon set is relatively easy, compared to the Tier sets, requiring only 4 other people most of the time (up to 9 for UBRS, though). I highly doubt I will ever see any of my Tier 1 to 3 sets, nevermind collecting each entire set. I have yet to see any of my Dungeon 3 set (got the mage one in a drop, but no Hallowed for me yet  )
One day soon, I hope ...

Wow Larissa THANKS SO MUCH, I have a way better understanding.
So basically your saying is all I need to really get is just maybe a Tier 0 set then move onto Tier 4-5?

If you have Burning Crusade you might be better off skipping the lower tiers and simply getting Uncommon (Green) / Superior (Blue) items from Outland. If I understand things correctly.
Now. I need to see what Legendary and Artifact items look like. Time to search, methinks.

Wow, you got through all my babbling, I'm impressed!
Found out a little more. Dungeon 2 is actually the upgraded Dungeon 1 set.
So for the sets, the relative strength from weakest to strongest are:
Dungeon 1 (Tier 0)
Dungeon 2 (Tier 0.5)
Tier 1
Tier 2
Tier 3
Dungeon 3 (Tier 3.5?)
Tier 4
Tier 5
As Tanitha says, unless you're really dedicated, you can really just head out to Outland at 60 and collect the greens/blues there, which will be equal to or surpass Tier 3, and will be so much easier to collect. The Tier 1 to 3 set pieces are found in 20 and 40 person dungeons. So you would have to find that many compentent players who actually want to go there, make your way through very difficult encounters, and hope that your set pieces will drop. Then do it again, over and over, for weeks, and probably months, before you are lucky enough to actually have your pieces drop, and to be able to actually receive them over others in your raid groups.
You could spend some time trying to gather your Dungeon 1 set. It's a lot easier to find 4 other people to go to a 5 person instance than a bunch more for a raid. Three of the 8 pieces are Bind on Equip, and you can actually search the Auction House and see if someone has put them up for sale (I found 2 of my pieces this way). The rest you will have to go through instances like Stratholme, Scholomance and UBRS, probably quite a few times, in hopes that they will drop. I'm mainly getting them just to say I did get them, and to go on the quests to upgrade them to Dungeon 2, but I'm thinking I'm something of a rarity in that regard.
If you give your class, we could list the pieces you'll be looking for.
If you're looking to play the game just straight through, I would recommend going to the level 60 5-person instances once or twice, to get a feel for them and enjoy what they have to offer, then move on to Outlands and work your way up though the levels. Maybe UBRS too if you can find a group going there.
If you're serious about end-game content, then the first thing you're looking for is your Dungeon 3 set. A lot of the upper endgame raids are not implemented yet into the game, and most top endgame guilds are still gearing up for Karazhan, the 10-person instance, or making their way through for gear. So I don't think that the Tier 4 and 5 gear is even in the game yet, or only a few pieces are.
Have fun,
