Roll DS. The only difference it makes as of tbc is you get a profession specific level 65 bop pattern, and 3 bop epics at 375 skill from your specialization trainer. Aside from those from each specialization, lw's can make everything else. Not sure exatcly what ds has but I know its mail, and I'm pretty sure it's not just shammy gear, might want to check an online resource filter >lw recipes, sort by skill

The only diffrence between DS Tribal, and elemental, is that you can make a diffrent epic set with each spec.
So, in DS leatherworking, there are two BoP epic sets, and one of em is for hunters. (The other for shaman)
The tribal is for oomkins and trees, and the Elemental set is for rogues and kittys. So, you can avoid those.

dragon scale at low lvls is a waste of time for a hunter though. some of the gear has nice resistance for dungeons but lacks in agi

The black dragonscale set is one of the best pre-60 hunter sets - i also used a couple of pieces on my DPS shammy.
Along with a couple of pieces of the BoE Tier 0, you have some great itemisation.
I even grinded the rep so that I could make the epic black dragonscale boots - very nice
All replaced as soon as I hit outland.
