Go visit Nat Pagle, he can found south of Theramore Island, in Dustwallow Marsh zone. He's on the shore of one of the islands. He gives you a quest to catch 4 kinds of fish, each from a different zone. Bring a few lures with you that increase your skill, as high as possible.

A nice fishing guide. According to that, you'd want between 400 to 525 skill level to prevent the fish getting away.
To clarify Gormidan's point, have you done the lvl 35 fishing quest from Nat Pagle?
You can't move beyond 225 without doing it. Once you've done that, you can get up to 300 fishing skill. The last stretch is 300-375 from a book in Outlands I believe (available at lvl 45).

Where do you like fishing? Tanaris, Feralas, Azshara......wherever it is, go there and just keep fishing. Unlike other gathering professions, it doesn't matter where you fish. It's based on the amount of successful catches. You could level it in a capitol city if you wanted, but you'd get nothing to show for it really.
My tactic is to go to Tanaris, run north up the coast from Steamwheedle Port, find a nice isolated spot, and just chill for an hour or so. You'll get lots of Spotted yellowtail, Zesty clam meat, some Stonescale Eel, and other 225+ cooking skill fish. The clams will drop pearls occasionally. You could run south down the coast looking for pools, but as I was about lvl 25 when I started doing this, I would get ganked easily if any enemy players were around.

Like Banesidhe said, it doesn't matter where you fish... so I'd pick some place which drops the type of fish you want, plus has a fishing supplier next to it. This allows you to pop on +75 lures and not have to carry them around.

If you're a druid, pop on a lure and fish in the lake in the moonglade. Around 250 you don't need a lure any more. This is where I fished to 300.

Once you hit the outlands, head to the Cenarion Refuge in Zangermarsh. The fisherman there sells the book to go past 300 fishing. It's also the easiest place to fish in the outlands. Pop on a 75 lure (which he sells) and fish there for some nice outlands fish.

Speaking of fishing... I should go do it. Just can't find the time between running instances and doing daily quests.

The lake just south of Cenarion Refuge is the place you'll want to start in Outlands; the other lakes in the zone have a higher skill requirement, and even w/ +75 lures you'll still lose a lot of fish when you're starting out.

Overall though fishing is a LOT more pleasant now after the last patch. Just be sure that you watch the meter and click no matter what before it runs out. Sometimes the timing is pretty tight, but with a little practice you'll almost never lose a fish!

Pick a easy low level fishing area and use lures to level the fastest. The less fish you lose, the faster you level. Fishing for higher level fish will not level you faster. You can level your toon in the Stormwind canals all the way to 375. If your cooking skill is pretty low, you can level both fishing and cooking at the same time. I started out with 1 skill in each and I leveled both at the same time to 375.

Or fish for your alts that you want to level in cooking but not in fishing. I think getting one character to high level fishing is all I can handle!

For a prolonged fishing stint to level up from 225-375, I would simply fish in SW canals.

The reason being that you will be generating some lovely rested bonus while you fish.

The following figures are taken from wowwiki regarding how many fish you require to catch at certain levels.

Current level Catches to skill-up (approximate)
100 2
115 3
140 4
165 5
190 6
215 7
240 8
265 9
290 10
300+ 10-11

So from 225-240 would need 15 * 7 = 105 catches
240-265 25 * 8 = 200
265-290 25 * 9 = 225
290-300 10 * 10 = 100
300-375 75 * 11 = 825

So you would probably require around 1455ish successful casts, which is why I reccomend Stormwind as 1455 at an average of 10s per land would be just under 4 hours of solid fishing

So, shiny bauble fishing in sw canal up to 225, then do the quest...

What i'd like to know is other than a big iron fishing pole, and enchanting my gloves..what other gear can i get to help out my skill?

Check out Seth's Graphite Fishing Pole. It's obtainable from a reasonably easy quest and gives +20 fishing (requires 200 fishing). It's the best rod Alliance can get before winning the fishing competition in Booty Bay. Kind of nice having the STA over the Iron rod because you're always rogue bait standing on the shore of a lake!

You can also get High Test Eternium Fishing Line for a hand in quest on Sunday as well. This is like an enchant for your fishing rod and gives +5 fishing.

There's also +5 fishing boots and a +5 fishing hat that you get the same way as the eternium line. You catch rare fish during the tournament on Sundays, turn them in in Booty Bay and get the item.
