Im looking for a simple mod that will allow me to create a health bar that I can move around the screen....that only shows my health and a casting bar directly underneath it.
I am having a problem as a holy priest, that when in instances....Im constantly watching everyone elses health...and forgot to watch my own, and that is why I end up dieing.
If anyone know of something that send a verbal message that my health is low..or anything to worn me....I be appreciative.

What I did to solve this is use Pitbull to make my party bars identical to my player bar, but about 80% of the size. This way I don't ignore myself because when scanning the bars I'll include my own :) .

Yeah, PitBull (http://files.wowace.com/PitBull/PitBull.zip) should help you there. Highly enhanced and very featureful Unit Frames.

Also, There are alot of mods that give low health and low mana warnings, personally I use Miks Scrolling Battle Text with the option turned on, set to crit and the font for that event pretty large.

Regular scrolling combat text will give you a warning as well.
Several UFs will let you create the bar the way you want it. AG_UF, Pitbull... I think Xperl, Nurfed and even CT do as well.

Well there's little point running AG these days with Pitbull being virtually a remake anyway, but the other suggestions are good.

I used AG_UF and found it slightly friendlier to set up - and the early Pitbull versions were a bit like me... completely lacking anything resembling a memory. I've had to redo my layout over a dozen times because Pitbull forgot it.
Latest version(s) finally lets you copy your layout from other chars and doesn't forget what you did as soon as you wake up the next morning.

Well it's had profiling in for ages but I'll agree with it forgetting changes every so often. There was also a recent overhaul to the layout menu which has made settings things up a lot easier now.

I use Enemy Cast Bar, which gives me my own cast bar, target bar, focus bar etc. in a nice crisp customisable/movable style. I also use Scrolling Combat Text, which by default plays a warning sound when your health or mana drops below a configurable trigger point, as well as showing visually when you're taking damage. I started using SCT precisely because I'd sometimes neglect my own health when healing, or fail to spot when I was taking damage. It really does help a lot. As for unit frames, I am a huge fan of X-Perl (gotta love the Grim Reaper feature too).

For cast bars, I don't think you can really beat Quartz.

I use one of the various HUD addons (metahud, personally). GIves you all the good info right around your toon (Health, Mana, a casting bar, target info)

For cast bars, I don't think you can really beat Quartz.
And I personally think they're not needed.
They're included in standard UI, every single UF comes with a Castbar included and most HUDs feature one.

"Bars", plural: self/enemy/target/focus.
But yes, default one is usable. What I mean is, if you want a mod to add things to it, I don't think anything does as much or does it as well as Quartz.
