As a hunter we give up a bag slot for arrows. Fair enough, every class generally gives up a slot for something.

But carrying enough arrows for a long fight is a bummer.

Why don't mobs drop arrows?

Replenishing your ammo whilst in the middle of a dungeon would be so much easier if we could pick up extras off of those we drop.

Or why is there no trade skill to fletch? making your own arrows from raw mats would be great. Epecially if we could create a variety of them with different effects and swap them around with hot keys.

You could make arrows geared towards slaying a certain type of mob or class, with a delay being imposed on switching types.

But on a base level the ability to take a few raw mats with us and create arrows during mana breaks would be so much easier.

Not really needed. Vendor arrows are cheap, and killing a couple of mobs makes back the price of a whole stack. 18 slot quivers are vendor purchases now, and a full quiver is enough for a raid (even though I generally take a few spare stacks on top).

However, for another reason, it would be nice if there was some way to be a fletcher- to give parity with the ability for engineers to create bullets. However, you'd have to find an equally deserving profession to buff in this way, and there isn't any as materially unrewarding and engineering :)

Perhaps a new carpentry trade skill would be good.... So you could create arrows from various wood and feathers.
But there are alot of other things you could make... like tables and chairs?

Maybe its a crap idea :)

But i think creating special one shot arrows with raw mats is a good one.

The only trouble I see with a "fletching" tradeskill is that it's essentially for one class only: hunters. Sure, warriors use arrows too, but it's not like they need all that many of 'em and well, you know what I mean.
Now, I don't see any other tradeskills that simply aren't usable with a certain class. Sure, a paladin with leatherworking is not the most common sight, but at least he CAN wear what he makes and riding crops are a pretty good sale on the high levels for anyone. Even the mage who picked up blacksmithing can use some weapons and skeleton keys from all the stuff he can make.

As for instance mobs dropping arrows on occasion? Sounds good on the outside, but thinking a bit further I can already see a load of hunters complaining how someone ninja'ed their arrows...

Besides, isn't there an NPC in Orgrimmar and Ironforge who trades bullets for arrows? Sure, its only thorium ones so its a bit outdated, but there's a way for you to "make arrows" with engineering.
