Until you hit lvl 60, and maybe even further you should take at least one gathering profession.
I would suggest mining or herbalism. The other profession should be tailoring, the tailored gear you can get at 70 simply cannot be easily matched by other gear. That and tailoring will be easy to level as you can level it with the cloth drops youget.
Once at 70 you can determine if enchanting/jc/alchmey really suit what you want to do.
Enchanting is the only one that really does not require a supporting profession.
JC almost requires mining...mining is a real boost for it, and you can't have both with tailoring.
Alchemy almost requires herbalism..tho some people don't do this.
Enchanting only requires gold. its the best match for tailoring, but it will be a money sink to you and the benefit of taking enchanting is fairly small.
I've been an enchanter for 16 months, max level. if I had it to do over again I would have stuck with herbalism or mining the gold income is good and enchanting really isn't that great.
the only benefits you get from it are the ability to de (a friendly guildmate will do this for you anyway) and a BOP +heal enchant..+20 to each ring a small thing to have for the 2-3k worth of gold/time you will invest.
My opinion? take herbalism.

If the choice is between mining and herbalism, then I'd suggest you rather go for mining. What you gather with herbalism is nearly only used for alchemy, with the odd exception for a herb needed in a tailoring/leatherworking profession. Mining however, has no less than 3 professions that require its materials: jewelcrafting, blacksmithing, and engineering. Hence the mining materials are more in demand and therefore worth more.
The reason many people choose to combine enchanting with tailoring is because then you can disenchant the green items made with tailoring - they're usually quite worthless on the AH, since every tailor makes them to skill up, and then it's a cheap way to get enchanting materials. If you decide to hold off enchanting for a while, then you may have a bit of a difficult time selling your tailoring gear. What you might want to consider is taking up two gathering professions at first, so that you can make some nice extra money - later you can go for tailoring (by then you can level easily since linen and wool cloth will be found in abundance) and perhaps take up enchanting with it. I find that with my mage, every extra bit of health/protection/intellect is most welcome - though I must note that it's an alt, and therefore doesn't have financial issues that a first-time toon has.
If you do take up a second gathering profession, go with skinning - if only for the fact that you wouldn't have to keep switching between tracking herbalism nodes and mining nodes.
