Is there anyway to copy the addon settings from my old server to my new one?
I xferred my main and want to have my UI exactly as it was before, is this possible?

Actually, what you do, is find your character's old configuration folder:
<World of Warcraft folder>\WTF\Account\<Account name>\<Old Server Name>\<Character Name>\
move it to the character's folder in the new server's folder. Every character has configuration settings, but they are by server. When your character migrates to a new server, your client doesn't know this, so you have to move the configuration files yourself.
Please note that replace the parts between (and including) the greater than/less than symbols in the above with whatever applies for you personally.

Yeah, just copy what is inside the folder for the old character name on the old server, and put it in the folder for the new character name for the new server, and everything will be fine. I pull some "dirty tricks" using/exploiting the Linux file system/structure, to make some of the setting files for all my characters quite literally be the same file on the computer. So certain settings, like the position of windows and such, remain consistent (I got tired of having to resize/reposition everything for each character)

I don't need to include anything from the interface folder so that I can retain macros, etc etc?

Your macros are in the "macros-cache.txt" file inside the character's sub folder. There also is one that is account-wide in your account's folder (for the global macros), but there are none that are server-specific. The Server's folder should only contain subfolders for the individual characters on the server. As long as you copy the contents of the folder where the character originally was (and was named), to the new folder for the new character name, on the new server, it will be *exactly* the same like it used to be. Make sure you overwrite every file in the new folder with the files that are from the old one.
There is typically a character-specific subfolder inside the character's folder for UI/addon configs that are character-specific. This, obviously, would be included as part of the contents of the original character's folder that needs to be copied (and everything inside it).
