Not a meaningful question, I'm afraid. It's a game of teamwork.

Well, depends on what you're short of at the time... e.g. if you have a group of all cloth-wearers, a tank might be useful, etc.

I meant more like raid in general

The one you enjoy playing the most.

If you play a character for any other reason you will not have fun in the game.

The burning crusade made pretty much all speccs viable for endgame PvE so it's more a question of what role (tank/healer/dps). How many of each class and with what spec you bring varies a lot. Synergy has become a major keyword and building a good raid is a question of what classes will work well together within each group.

All raids take tons of dps and a dps class with good CC like mages are popular for 5 man groups as well as usually filling 3 spots in a 25-man raid. You will however be easier to replace by picking a dps class. Tanks, healers and support/dps classes have less spots but are aren't as easy to replace. Our raid typically has 3 tanks, 7 healers (sometimes 8) and rest dps. We have 1 arms warrior, 1 enh shaman, 1 ret pala and 1 shadowpriest as well as a survival hunter as dps/support out of those dps.

Pretty much any class can make for a good asset to a raid so I'd go with Playthemalls advice on just play what you like best. Just keep in mind that some speccs can be hard to get a spot with as raids only take one of that class/specc (again making them all the more irreplacable once you get a spot).

every single class has a needed use in a raid apart from maybe a retri pala, arms warrior or disc priest. other than that i would say every class and spec has a talent that is going to be if not needed then wanted by a group in a raid.

So many silly answers, the only real answer is:

SHAMAN!!!

Look at the sunwell kills, very few of them are without 4-5 shamans.

After all, he didn't ask which classes were useful, he asked which were the MOST useful.

Picking a class that can be used with any specc is a good card ofc, but then again you'll have to gear up for all of them. Some guilds will be desperate enough to help you out here if you're willing to respecc however. This typically means going from dps to healer.

Pretty much every class and specc in the game can be made good use of in a raid now. You want an arms warrior for blood frenzy together with whatever other melee dps you use. A ret pala on a roguespot will be a huge boost being able to keep up all judgements.

I agree about disc priests however. Their use is a bit situational and I'd rather have CoH most of the time. Frost mages, MM hunters and the other PvPish speccs don't really cut if for raiding either. Fury warriors can take a rogue spot, but I have no idea what they're capable these days tbh.

And before Sunwell, where is where most people start off, they're not nearly as useful due to the raid being on the move.

Agree with swaldman, meaningless question. How long is a piece of string?

PvE means different things to different people.

the correct answer is

"whichever class your guild doesn't have enough of"

QFT. Even if ou restrict the question to raids there's such a wide difference between kara and sunwell that it's a meaningless question.

Too... define 'most useful'. Want highest single target dps? Rogue. need great AoE and CC? Mage. AoE tank? Pally. Crazy buffs and great melee dps. shaman. A healer to keep the tanks and melee up? Resto shaman. Healer with great HoTs? Druid. etc etc....

This question feels like a variation on 'what's the best class to play' and not only isn't it really answerable now, opinions will change when the WotLK hits.

Bingo. At the moment, my guild could really use a few more resto shamans and druids. We are all full on tanks, dps, and other healers at the moment, so resto shamans and druids are currently the most useful pve class for us.
