Is it possible to complete the Kalimdor and Eastern Kingdoms loremaster achievements without doing the instance quests?

I'm not sure about normal instances, but I don't think you need them. You won't have to do raid quests at least. For Kalimdor you'll want to do everything you come across as it seems to require a much bigger quota of total quests and simply finding them can be hard enough. Most pre TBC instances are trivial at 80 and there's no point trying to get it done before you ding 80 as so much of it will turn grey anyway.

I completed the achievements. You will absolutely need to do the Kalimdor instances and will probably need to do the dungeons in the Eastern Kingdoms. You DON'T need to do the raid dungeons.

One item of note: None of the Caverns of Time quests count towards the achievement.
