I find that a good way to keep things fresh (and have loads of quests to do) is to travel around.
So far, my druid has been in newbie areas of Dwarves & Gnomes, then Humans... and is finally back with Night Elves. Planning to visit the Draeni afterwards...
With all this travelling, I'm afraid to miss out on important stuff. Like that other player who found out at a much higher level that he was missing an important skill that he could have gotten early.
Is there a checklist somewhere? I'd like to know not only for the night elf druid, as I am playing multiple characters, most of which will do extensive travelling.

I have never found a quest checklist like that, though I never gave it much effort to be honest. A checklist like what you are describing would be more like a book.
The only thing I would suggest is that you use the online databases like wowwiki and wowhead. You can search for all quests by zone, level, class, etc. They will tell you the names of the NPCs that start the quests and where you can find them. They will tell you whether or not there are any prerequisite quests you need to do first to unlock them and what level you need to be before you can accept the quest. There will also be lots of comments with useful info on how to complete each quest.
The only quests you should be concerned about 'missing' are your class specific quests that would 'unlock' your class abilities. Just go to one of the above sites and search for class specific quests and you will be ok.

the only thing (sadly) that you must endure is the quest for your bear form. everything else is learnable via trainer.

Hmm, a realy complete checklist would be as big as the game itself.
Maybe we can help you if you provide more information about what you dont want to miss.
I would advise you to just play the game. Make sure you go to your class trainer ever other level from 2 to 60, and every level from 61 to 80. That will give you most abilities your char can have.
As for the rest, there are just soooo many things to discover, learn, explore etc, a full list would be way too big to be any good.

one thing to check is your acheivements tab. if you're not loremaster or explorer, or completed every single dungeon and every single world event, you're missing out on something at least. use that as a guide. its helpful.

we can do a few
warrior: fray island for berserker stance
warlock: each of the minions has a quest to learn it
druid: bear form
rogue: poisons and lockpicking
those are the only ones i know. as far as i know all such quests are given by the class trainers.
each class has a few quests in the old world for an item specifically relating to them. the item is pretty cool but not necessary. The exception being the shaman totems of course.

I'm not trying to do all quests or get all items, I just want to make sure I don't miss something crucial.
I have bear form already, so I guess that my druid is ok if I visit *any* druid trainer once in a while from now on... nice to know...
I'll keep an eye out for totems and warlock pets.
Anything to look out for for the mage, hunter, or priest?

Mage class quests only get you gear, so they aren't worth it for all the travel you need to do. However, you do need to remember to visit portal trainers to learn to teleport/open portal to each major city at the appropriate levels:
IF/SW/Exo teleport - 20
Darn teleport - 30
Theramore teleport & portal - 35
IF/SW/Exo portal - 40
Darn portal - 50
Shatt teleport - 60
Shatt portal - 65
Dalaran teleport - 71
Dalaran portal - 74
Hunters have a quest to learn to tame pets at 10.
Priests used to have a quest or 2 to learn their racial spells. I think you can get them by level 20. I haven't played a priest in a long time though so this may have changed.

priests no longer have racial spells, they have all been folded into the game in some other way

as a druid, the only trainer you need to visit is the 1 in moonglade. you should have the teleport spell for it by now so just go to the trainer there every couple of levels to learn your new skills and check for quests. all class specific quests are available at your class trainer.

Shaman Totem Quests in case you were wondering:
Level 4ish: Earth (Note that this quest is given in the starting area of the starting zone, Red Cloud Mesa (Tauren), Valley of Trials (Orcs and Trolls), Crash Site (Draenei))
Level 10: Fire
Level 20: Hell...I mean Water
Level 30: Air
