They're both profitable, but the one that'll you'll be able to take stuff to the AH with is mining. My mage has both these professions, and I ENJOY mining more. Nothing is more satisfying than finding an Arcane Crystal in a rich thorium vein and knowing that you just made 20g for a couple seconds of work. But as such. mining is less consistent income. You don't know how many veins you're gonna come across. That being said you can sell a stack of 20 mithril bars for around 3.4g on my server.
For leatherworking, rugged leather sells to vendors for 5s each, so it's a consistent source of income when you're grinding bats or something. And think leather I mail to my alt and he makes those vests that take 7 think leather and 2 sewing stuff to make. With that I turn 7 think leather into a 50s profit which is also nice. And when i make those I of course vendor them cuz people don't buy such crap.
If i had to venture a guess, I'd say mining was more profitable, but you're going to be competing with a lot of horde and alliance for those precious veins later on. So yeah, more money, but less consistent income.
