How do you know what to dump to the vendors and what you should AH? I have seen some really low level greens in the AH, but does anyone actually buy them? Is there a level requirement that makes items sell better in AH?
Also, how should you price your AH items? I see prices all over the board, but again, does anyone actually buy them?
Your best bet is to get the Auctioneer Add-on. You can download it from www.auctioneeraddon.com. Be aware that it is in beta at the moment, but it works fine. That gives you a rough baseline price for the items, and it's comparative value for disenchanting.
Auctioneer will also make price suggestions, but I usually drop a bit off that to make it more compelling for people to buy them. If you do regular scans you will also have a reasonable baseline for what items sell / sold for, so you can make a more informed judgement on whether to sell it or not. If you are planning on playing the AH, it's invaluable.
Now, to the main topic. Low level greens are useful for enchanters while skilling up as they can discenchant them for materials.
Try this, also the following a bit outdated but basics still apply. I know that Gorny also had a guide on this issue, might want to poke him about it. Can't seem to find it myself.

Personally, I use a mod called Auctioneer to help me price items, and see if it's worthwhile to try and sell on the auction house. What sells really depends on the gear itself. You have to look at the bonuses and think to yourself "Will anyone actually want this?". Few people will want cloth items with +strength and +agility on it. The cloth wearers are much more interested and benefit way more from +intelligent, +spirit and +stamina. Few will want a two-handed sword with +int (no idea if there are actually any like that, but just as an example). This isn't to say that absolutely no one would want it, but the chances of finding such a person, to come on to the AH during your auction, and to look for such an item and buy it, is very miniscule. I usually try to sell what I consider very useful items over the weekend, when there are more people online and playing. Everything else, and that stuff that doesn't sell, I disenchant.
To gauge prices, you can search for the item or something similar before putting it up for auction, to get an idea of what the current prices are. If you use Auctioneer, you can scan the Auction House, and collect price data on all current auctions. You can then examine your items and get an idea of how much things have sold in the past, and what you're likely to get it for now.
Keep an eye on how much deposit you have to put up to auction the item. Some items have such a huge deposit that there's little point in putting up the auction unless you know it's a guaranteed sale. I've seen items where I would have lost out if the item did not sell, and would have made more if I just sold it to a vendor. But as I am an enchanter, I rarely sell to vendor. Shards, dusts and essences usually sell for the same amount as the item, if not much more, and with no deposit fee. So if my shard doesn't sell the first time, I can just keep putting it up until it does.
Now, if you get blue or better BoE items, well, that's a different story all together. A lot of such items will sell for a lot more than greens of the same general level, and can make you 10s if not 100s of gold. They are often bought by those who are trying to get the best gear period for their character, often called twinks. Again, search the auction house to see if others are being sold as well to get an idea of price, or check Auctioneer.
As to what actually sells, well, hard to say. As Tanitha says, low level greens will probably be bought by enchanters to disenchant. I don't think many will buy low level greens to actually use, as you grow out of items pretty quickly until you're well into your 20s or 30s. Higher level items will sell more often. Also, try on the item as well in the dressing room ... people with money to burn will buy items if they look really nice. Not that I have ... honest!
nothing you can read anywhere ( including in your auctioneer database ) will beat the experience you accumulate. This is due to the fact that every server has his own economy.
learning by doing is realy the only way. ( though some basic hints like in the threads Valas pointed out surely help to get the basic idea )
I looked at the auctioneer addon homepage, and there is a warning that they are not yet 2.0 compatible. If I install it, is it going to work? Or mess up anything else? I really don't know squat about mods and addons.

Well...My hunter didn't use AH at all except to buy two or three items, all the way to 60, and had a mount and 163ish gold when he got there...He vendored EVERYTHING.
As for how to price things...price them just a bit lower then equivalent items that are already there.

see ? my warrior alt used the AH and had over 500...
and this still is little pocketmoney compared to what people can make if they realy seriously use the ah.

Auctioneer Beta works fine w/ both updated (Burning Crusade installed) and original WoW. Just go to here http://auctioneeraddon.com/dl/AuctioneerComplete/
and download "auctioneerpack-3.9.0.1310.zip". unzip it into the WoW addons folder. when you first log into the game (after entering un/pw but before selecting a character to log in with) look in the lower left corner of the screen. you should see a red button labled "Addons" or something like that. select that button, then make sure all of the items are checked. also make sure "use out of date items" (or something like that) is checked, then hit okay, and log in. the auctioneer site has a forums section w/ more specifics on using the programs included in the package. i've found auctioneer invaluable

Other stats -might- be useful, but it depends on what you find them on.
"Of the Bear" might be worth a fair copper on a piece of plate, but it's useless on a cloth 'armour' piece.
