Each race has their own starting area (except Gnomes, who start in the Dwarf area, and Trolls, who start in the Orc area). You will find that virtually all characters you encounter early on will be of your race. You may find the odd faction member running around to do something different for the race they chose.
You won't really start seeing other races until you hit your main city. But even then, with a druid, it will still be sparse. Not sure what side you're on, but the Night Elves start off on an isolated island, that is inconvenient for most other Alliance to get to. Though I'm assuming that the Draenei will port into Darnassus? Haven't gotten that far, so I am not sure. The Tauren are off to one side from the Barrens, but there is little need for other Horde members to head to Thunder Bluff, and so you will again mostly only see those of your own race.
You should be around 10 or so when you get to your main city, though you could just follow the road all the way there if you wanted.
Tauren will then move into the Barrens, and there you will see all your faction running around, especially Orcs and Trolls, as this is their above 10th level area too.
Night Elves are still somewhat secluded in their over 10 area, Darkshore, but you will see a few more of the other races.
If you really want to see/interact with the other races of your faction, you should make your way to either Ironforge for Alliance, or Orgimmar for Horde. These are sort of the hub cities for each faction, due to their locations. Stormwind is pretty populated with other races as well, due to it's closeness to Ironforge, and areas like Westfall for the Deadmines, and Stranglethorn Vale.
You won't really see much of the other faction except for the few high levels who like to run around the lowbie areas, at least until probably your 30s or so. By then, you're starting into contested areas like Stranglethorn Vale.
As to quests, the starting areas are fairly linear, and you'll do virtually everything available. Once you leave your up-to-10 area, you'll have to play it as it comes. Most areas are set up for certain levels, and so you'll be able to get most of the quests when you arrive in town. But then there are more quests scattered all over the place.
If you're really desperate to know, you can do an internet search to find sites with all the quests listed, where to get them, what to do, etc.
