Normal Fish
Normal fish are the most commonly caught. They work as a free source of health regeneration (at lower levels at least) and a good source of materials to skillup cooking (the first year of Burning Crusade, you had to use fish for a few of the levels in cooking, until they added other meat for that skill area). They don't provide "food buffs" like some other cooked foods, and if you're able to heal, or have plenty of bandages from First Aid, you will most probably not need to bother keeping the normal fish. The money gained is very small, but if you cook it, the fish can often give some upgrade in terms of regenerating health, or at least give you a higher vendor value.
Alchemy Fish
There are four types of fish used by Alchemy to make oils and potions, as well as further uses with other professions.
Cooking Fish
Cooking is at higher levels used more and more due to the fact that a good chef can produce food that gives a "well fed" buff that stays for 30 minutes, giving an increase of a stat to your character, usually involving a plus to Spirit as well. These buffs are so great because they stack with all other buffs, including potions and flasks. However, they don't stack with each other, so only one "well fed" buff can be active at a time. One exception is the [Unknown Item: Savory Deviate Delight], which is a buff from food, but doesn't count as a "well fed" buff, so it stacks with other food buffs.
Bloated Fish
In some cases you come across fish that have eaten something they perhaps should not have. They have become bloated, and are named as such descriptive in the game. With a bit of luck, you will find something useful inside the fish! You can find these bloated variants in the same waters as their non-bloated versions. They can contain gems or rings, so always worth the time to open up!

Crates
You can once in a while find a crate while fishing. They have the marking of "Venture Company Supplies" and always contain a few engineering supplies.

Trunks
Trunks are not very common, similar to the crates, and are usually filled fith a few bolts of cloth, leather, and uncommon quality gear. They are not found locked.

Locked Chests
The Locked chests are also uncommon, and despite having to ask a Rogue or Blacksmith (they can make keys that open locks), the contents are usually quite disappointing. You can fish these up from "Floating Wreckages", and only contain bolts of cloth, leather, and (very rarely) any green loot.

Clams
You can on occasion pick up clams, which can contain pearls, just liek clams you can loot from mobs.
Message in a Bottle
[Unknown Item: Messages in a Bottle] are found on occasion (rarely) from salt water fishing in zones of lvl 20-40. They usually include scrolls, recipies or damp diary pages.
